AGRICOLA VALLONE GRATICCIAIA is born from a careful selection of Negroamaro grape clusters from an old bush-trained vineyard. The grapes, brought to full ripeness, are then left to dry on racks. The name of the wine comes precisely from the “Graticciaia”, the drying room where the light mats made of woven reeds and wicker are arranged. When the drying process is complete, the grapes move on to vinification. The physiological processes that occur in the berry and the fermentation of the must in late autumn (when the ambient temperature is lower) lead to an evolution completely different from traditional vinification.
