Gratticciaia
AGRICOLA VALLONE GRATICCIAIA is born from a careful selection of Negroamaro grape clusters from an old bush-trained vineyard. The grapes, brought to full ripeness, are then left to dry on racks. The name of the wine comes precisely from the “Graticciaia”, the drying room where the light mats made of woven reeds and wicker are arranged. When the drying process is complete, the grapes move on to vinification. The physiological processes that occur in the berry and the fermentation of the must in late autumn (when the ambient temperature is lower) lead to an evolution completely different from traditional vinification. Wine aged in French oak barrels. The temperature of the must is strictly controlled throughout the slow fermentation process, and aging takes place in small wooden barrels.

The grapes are left to rest on the “aréle”, bamboo cane racks, following the traditional production method. Fermentation in cement vats and aging in large barrels for at least six years stabilize its structure, making it one of the longest-lived red wines in the world.

Augusto Cantele was one of the visionary pioneers of contemporary Apulian Chardonnay, capable of reflecting the terroir in which it is grown: the warm Salento region, specifically the areas of Guagnano, in the province of Lecce, and Montemesola, in the province of Taranto. Harvest takes place during the first ten days of August, followed by gentle pressing of the bunches and cooling of the must to 10°C. Fermentation takes place in stainless steel tanks at a controlled temperature of 15°C. It ages in stainless steel until bottling. The color is straw yellow with light greenish highlights. The bouquet offers sensations of lily of the valley, magnolia, broom, and thyme, complemented by pleasant fruity and herbaceous notes in the background. On the palate, it is fresh, savory, and smooth, with an immediate onset and a harmonious finish. It accompanies all seafood dishes, especially fish, shellfish and crustacean dishes.

Bellavista's Franciacorta Grande Cuvée Alma Rosé Pas Dosé is produced in vineyards located in the heart of the Franciacorta DOCG region. The name Alma, which in Latin means "she who nourishes," is a tribute to this land. It is produced primarily from Chardonnay grapes, with the addition of Pinot Noir, harvested and selected exclusively by hand from vines averaging over 25 years old. Once the grapes are vinified, the wines are aged in pièces (228-liter Burgundy barriques). The sparkling wine is made using the classic method, with maturation on the lees. It is characterized by an antique rose color and a fine, persistent perlage. On the nose, it opens with a broad aroma, featuring pleasant nuances of Mediterranean flowers, citrus, peach, lychee, and pomegranate, with final notes reminiscent of white chocolate, almond, and marzipan.
